In short: Peachy, full-flavoured and rounded
The estate run by Bruno Michel is now organic - and while a clever person might recognise this in his wines, there's no doubting that the results are delicious. No tart/sugared contrast here, but long, elegant flavours of brioche and nuts. This wine, 'Assemblée' spends an extraordinary 7 years on its lees in bottle before release - time well-spent on making a Champagne worthy of some very fine company and very fine food too, should you choose.
